On a nutritional value, and monetary value, it seems almost ridiculous to throw-away or separate out the egg yolks. The egg yolk contains the full amounts of Vitamins A,E,D,K, DHA, AA* and Carotenoids.
DHA is an omega-3 fatty acid which benefits the body over a large spectrum of ways as well as a necessity for health brain and retinal function.
*The egg yolk also contains AA (Arachidonic Acid) which is an omega-6 fatty acid. The average American's diet is unbalanced about 45:1 between Omega-6 and Omega-3 fatty acids. This is working to our disadvantage. Dr. Barry Sears of the "Zone Diet" has found that AA causes systemic inflammation on the body and in his books and articles advises against the consumption of egg yolks. If you stick true to the Zone and are looking for the least amount of inflammation, this cuts you down to just egg whites, and having to eat two egg whites for replacement as well as a lack. There are ways to combat this. You could spend extra money on Egg Beaters or some kind of fake egg supplement type thing.
This additional Omega-3 can help cut down inflammation and balance out the imbalance ratio between the Omega 6 and 3 Fatty Acid intakes, we're all accustomed too.
Either way, eggs are good for you, and if you like them, eat them. Like anything else they are best in moderation. Subjection to large amounts of any single food substance has a potential to becoming a food allergen. Eat it up.

sheena, its really up to your body.. one a day doesnt seem bad at all.. i developed slight egg allergies at one point, eating about 4 a day for probably like 3-4months straight (not even thinking about it, just out of habit and laziness).. 1 shouldnt be bad (in my opinion). hope that helps!

Sheena, also keep in mind the way the egg is prepared will have an effect on how many is too much in addition to the way your body handles it. For example, I know plenty of people who just do egg whites, and they can go 3 a day no problem. So it just sort of depends on both your body as Sean said, and also the way you like your eggs.
