You can either make this recipe into cupcakes or bake in a brownie pan, which is what I did either way I think this is a great recipe that is not too sweet but sort of gives me that dessert feeling when I'm craving sweets.
I can of coconut milk
1/2 a cup of coconut flour
1/4 cup of coconut oil
1 teaspoon of baking powder
1 1/2 cups of unsweetened coconut flakes
1/4 cup agave nectar (You can add this or not, I've made it both ways and if I don't add the nectar, I will serve it with a little honey on top to add a touch of sweetness)
Blend all ingredients together in a blender. If you are making cupcakes, line a muffin tin with liners and using an ice scream scoop, evenly distribute the batter into the liners and bake for 25-30 minutes until a tooth pick comes out clean. If you are using a brownie pan, grease the pan with grape seed oil lightly then add the blended coconut batter into the pan. Cook for 35-40 minutes until a tooth pick comes out clean. Remove from oven and let cool completely and then eat. Store in fridge.
